Ingredients:
- 1
quantity of pancakes.
- 60gm
(2 oz) butter
- 1/3
cup brown sugar
- ½
cup orange juice
- 3
tablespoons Tia Maria
- 3
large bananas
- cinnamon
powder to taste
Method:
1.
Heat butter in large frying pan or wok.
2.
Add brown sugar, stir until sugar is dissolved and mixture
is bubbling.
3.
Add orange juice, stir until combined.
4.
Add Tia Maria, bring to the boil, boil uncovered for three
minutes.
5.
Add thickly-sliced bananas and simmer for one minute.
6.
Fold pancakes in half and then in half again. Place on top
of bananas and spoon liquid over the pancakes until coated.
7.
Place 2 pancakes on each serving plate, spoon over the bananas
and the liquid.
8.
Sprinkle lightly with cinnamon.
9.
Served hot with whipped cream or ice cream.
Comment:
Yummy - but not for the calorie conscious.
Pancakes
Ingredients:
½
cup plain flour
pinch of salt
2 eggs
¾ cup of milk
Method:
1.
Sift dry ingredients into a bowl;
2.
add eggs, stir until mixture is smooth and free of lumps.
3.
Gradually add milk, mixing to a smooth batter. Allow to stand
for 30 minutes.
4.
Heat pan; grease well with butter or margarine.
5.
From a small jug pour 2-3 tablespoons of pancake mixture into
pan, swirling batter evenly around the pan.
6.
Cook over medium heat until a light golden brown. Toss or
turn pancake and cook on the other side.
7.
Repeat with remaining batter.
Comment:
This should make between 6 - 8 pancakes. Surplus can be frozen.
