Ingredients:
- 250
gm (8oz) bacon
- ½
cup dry white wine
- 3
eggs
- ¼
cup cream or sour cream
- ½
cup grated parmesan cheese
- Pepper
- Freshly
chopped parsley
Method:
1.
Cook 500 gm spaghetti or tagliatelle in boiling water until
tender but still firm. Set aside.
2.
Cut bacon into 1cm squares, saute in pan until thoroughly
cooked but not crisp,
3.
dd wine and simmer gently for 3 minutes.
4.
Drain pasta well, return to saucepan; immediately add bacon
and wine; blend together then add combined beaten eggs, cream
and grated cheese. Toss together over a low heat.
5.
Add pepper to taste. Sprinkle with parsley and serve immediately.
