Ingredients For Pastry:

  • 1 oz. dried yeast
  • 4 cups plain flour
  • olive oil
  • salt and pepper to taste
  • 1 egg (optional)

 

Ingredients for Pizza Base:

1 can peeled tomatoes, 1 can tomato paste; 1 large onion finely chopped, 2-3 cloves garlic (crushed), dash of Tabasco sauce; pack of grated Mozzarella cheese (do not go for inferior "pizza cheese")

Suggested Ingredients for Topping:

  • Garlic salt, chopped Basil leaves
  • stuffed olives
  • ground chilli
  • sage
  • continental capers
  • Old Hickory Smoked Salt
  • Polish or Italian sausage thinly sliced;









Method:

  1. Combine 8oz cup of warm water (or mix of milk and water) and yeast in a mixing bowl; add a dash of sugar to speed action of yeast if you wish; wait until mixture froths and yeast is activated;
  2. Add to 1½ cups of sifted plain flour and stir until smooth;
  3. Add 1 dessert spoon of Olive Oil and a teaspoon of salt;
  4. Add in a further 2 cups of plain flour and mix as well as possible;
  5. Dump onto board lightly floured and knead dough until it forms a smooth elastic ball;
  6. Put into a greased pan and allow to rise approx. 2 hours; pat down and chill until ready;
  7. Heat oil in frying pan or wok and add finely chopped onion, garlic and chilli, stir fry until onion is transparent;
  8. Add in a can of peeled tomatoes and 1 small can of tomato paste, season to taste with salt, freshly ground pepper and dash of Tabasco sauce;
  9. Simmer 15 minutes until half of liquid has evaporated - set aside to cool.
  10. Divide chilled dough into 3 equal parts; roll out into a thin dough and place each on a greased 9" pizza baking tray;
  11. Spoon over the tomato and onion mixture until all of base is covered;
  12. (optional step) Add a layer of sliced or grated Mozzarella cheese on top of the tomato base;
  13. Add your favourite toppings: ham and pineapple, Polish or Italian sausage with olives and capers or whatever you like;
  14. Add a layer of Mozzarella cheese over the topping and sprinkle grated Parmesan on top of all this;
  15. Spoon a small amount of Olive oil onto the top of the pizza;
  16. Bake in a very hot oven for 20-25 minutes, remove tray half way through cooking to ensure a crisp base.
