Ingredients:
- 1
Kg potatoes
- 2
sticks celery
- 1
onion
- red
pepper -diced
- 2
tablespoons chopped parsley
- ¼
cup sour cream
- 1/3
cup French dressing salt, pepper - to taste
- 2
rashers bacon
- 2
hard boiled eggs
- 90
gm (3oz) soft cheese
Method:
1.
Peel and dice potatoes, cook in boiling salted water until
almost tender; drain.
2.
Slice celery diagonally, peel and finely chop onion, slice
red pepper.
3.
Combine hot potatoes, celery, onion, pepper and parsley in
a bowl;
4.
Mix sour cream and dressing until smooth; season with salt
and pepper; pour over potato mixture, mixing lightly.
5.
Spoon into a shallow oven proof dish.
6.
Dice bacon, saute in pan until crisp. Drain.
7.
Sprinkle over the top of potatoes together with chopped eggs.
8.
Grate cheese and sprinkle over the top of bacon and eggs.
9.
Heat under hot griller until cheese is golden brown.
Comment:
Can also be prepared in a microwave. Add dash of Tabasco if
desired (I find most Chinese prefer it this way). I also add
sweetcorn to my recipe. There are many variations, diced carrot
is also a good addition. Can be an ideal accompaniment to
hot and cold meat dishes or eaten as a Vegetarian meal in
itself.
